Calculating unknown capacitance?

I'm building a variable parallel-plate capacitor which is connected to mains, (so standard 120-V, 60-Hz AC), and also eventually connected to a microcontroller which can take maximum voltage and current of 12V and 15mA. What value of capacitance would I get? (What formulas would I use?)

The capacitance is going to be directly proportional to the area overlap of the plates, and inversely proportional to the distance between the plates. Your specific question depends on the dielectric constant for the material between the plates, which I assume will be air?

Typically, relatively small variable capacitors like you describe will have capacitance in the micro-Farad range.
